Mixing Bowl: Recipes! Browned Butter with Mizithra Cheese from Old Spaghetti Factory

6 years ago we moved away from the city and have missed one of our favorite dinners out, Browned Butter with Mizithra Cheese from Old Spaghetti Factory. This last summer we visited our son and his wife in Idaho for my birthday, to my delight they duplicated that meal along with Spaghetti Factory's famous Pesto Salad Dressing on a green salad. It was so delicious. I thought it would be perfect for a fun potluck, Friday Night Dinner or dinner for someone special.

Old Spaghetti Factory Browned Butter and Mizithra Cheese

Ingredients:

  • 16 ounces pasta

  • 1 cup butter salted or unsalted

  • 1/2 cup grated mizithra cheese

  • 1/2 cup grated Romano cheese

  • 1 Tablespoon minced parsley

Instructions:

  • Cook the pasta according to package directions and drain, do not rinse.

  • While the pasta is cooking, brown the butter in a saucepan over medium heat. As the butter melts, it will begin to foam, remove the foam with a spoon. Continue cooking until it browns.

  • Place the pasta, browned butter, mizithra and Romano cheese into a bowl and toss until the pasta is coated. Garnish with parsley and serve immediately.

The Old Spaghetti Factory Creamy Pesto Dressing

Ingredients:

  • 3/4 cup vegetable oil

  • 1 cup mayonnaise

  • 3/4 cup buttermilk

  • 2 tablespoons grated Romano cheese

  • 2 tablespoons crushed dried basil

  • 1/2 teaspoon salt

  • 1 teaspoon minced garlic

  • Hot pepper sauce (Tabasco!)

Instructions:

  • Whisk together the oil and mayonnaise. 

  • Add the buttermilk, cheese, basil, salt, minced garlic and hot pepper sauce to your liking. Mix well. 

  • Cover and allow flavors to blend and mature overnight in your refrigerator.
